For this Fruity Gazpacho recipe that yields 2 liters, you will need the following ingredients:
- 2 kg of tomatoes (you can use vine tomatoes, plum tomatoes, or ripe tomatoes)
- 1 cucumber
- 1 onion
- 1 green bell pepper
- 2 cloves of garlic (to taste)
- 500 ml of cold water
- 60 ml of apple cider vinegar
- 100 ml of olive oil
- Salt and pepper to taste
- 1-2 eggs (to accompany the gazpacho)
- Toasted bread pieces (try our artisanal bread)

Step 1: Prepare the Ingredients
- Wash and cut the tomatoes: Wash the tomatoes well and cut them into medium pieces. There’s no need to peel them, as they will be blended and strained later.
- Peel and cut the cucumber: Peel the cucumber and cut it into pieces. If it has many seeds, remove them for a smoother texture.
- Peel and cut the onion: Peel the onion and cut it into medium pieces.
- Wash and cut the green bell pepper: Wash the bell pepper, remove the seeds and stem, and cut it into pieces.
- Prepare the garlic: Peel the garlic cloves and cut them in half. For a milder flavor, remove the central germ.
- Prepare the eggs: Boil the eggs in water until they are hard, then cut them into small pieces and set aside.
- Reserve some cucumber and bell pepper: Save a few pieces of cucumber and bell pepper to garnish the gazpacho when serving.
Step 2: Blend the Ingredients
- In a large container, combine the tomatoes, cucumber, onion, green bell pepper, garlic, water, and olive oil. Use a hand blender or a regular blender to blend all the ingredients until you get a smooth mixture. If you prefer a finer texture, pass the mixture through a sieve to remove any remaining skins and seeds.
Step 3: Season to Taste
- Add salt and pepper to taste. It is advisable to start with small amounts and adjust according to your preferences. You can also add the apple cider vinegar at this step, mixing well so all the flavors blend together.

- Place the gazpacho in the refrigerator for at least two hours. This chilling time is crucial for the flavors to meld and for the gazpacho to be very cold when served.

- Before serving, stir the gazpacho well. Add the reserved cucumber and bell pepper pieces, along with the egg and toasted bread pieces, to give it a crunchy touch. You can garnish with an additional drizzle of olive oil and a bit of oregano.
